How Tea Is Made: One Leaf, Six Teas

White, green, yellow, oolong, black, dark. They look and taste worlds apart, but almost all of them come from the leaves of a single plant, Camellia sinensis. There is no white-tea bush and no black-tea bush. The same fresh leaf becomes any of the six depending entirely on what happens to it after picking.

So the interesting question is not "what plant is this from" but "what did the maker do to it, and in what order." Pick a tea below and trace its path down the eight steps. The steps it goes through light up, the ones it skips fade out.

What each stage does

1.Withering
Fresh leaf sheds moisture and goes limp and pliable. Why: Concentrates flavour and makes the leaf workable. For white and oolong, this is where aroma is born.
2.Bruising
Cell walls are broken by tossing in baskets, rolling, or the cut-tear-curl machine. Why: The on-switch for oxidation: it lets enzymes meet air.
3.Oxidation
Polyphenols react with oxygen and the leaf darkens, like a cut apple. Why: The single biggest lever on colour and flavour, pushing the leaf from grassy toward fruity, malty and dark.
4.Fixation (kill-green)
Heat (steam, wok or oven) denatures the enzymes and halts oxidation. Why: Freezes the leaf's current state. The timing of this step is what separates green from oolong from black.
5.Yellowing
Warm, damp leaf is wrapped and smothered to swelter (men huang). Why: A slow, non-enzymatic mellowing that rounds the grassy edge into something sweeter. Yellow tea only.
6.Shaping
Leaf is rolled, twisted, balled or pressed into its final form. Why: Ruptures cells to aid brewing and sets how fast the leaf unfurls and steeps.
7.Drying
A final firing, baking, pan or sun brings moisture down to roughly 3–5%. Why: Makes the tea keep, adds its own note, and for black tea delivers the final enzyme kill.
8.Curing / aging
An extra transformation: roasting, weeks of microbial wet-piling, or slow aging over years. Why: Deepens and smooths sharp young character into earthy, woody depth. These three are not one process.

The one variable that changes everything

If you only remember one thing, make it this: the difference between the tea types is mostly a question of oxidation, and oxidation is controlled by heat.

When you tear a leaf and leave it exposed, enzymes inside react with oxygen and the leaf browns, exactly like a cut apple going from pale to tan. In tea this is called oxidation, and it drives the flavour from fresh and grassy toward fruity, malty, sweet and dark. Left alone, a bruised leaf will oxidise fully.

To stop it, you heat the leaf. A blast of steam, a hot wok or an oven denatures the enzymes and freezes the leaf wherever it happens to be. Tea people call this "kill-green" or fixation. The single most useful lens on the whole system is: when, if ever, does the maker apply that heat?

  • Green and yellow are fixed early, before any oxidation, so they stay green.
  • Oolong is fixed mid-way, after the leaf has partly oxidised, anywhere from lightly to heavily.
  • Black is never given an early kill-green at all. It oxidises all the way, and the only heat comes at the very end, during drying.
  • White is never actively fixed. It just withers and dries, oxidising slowly and gently the whole time and never fully stopping.
  • Dark tea is fixed early but deliberately gently, at a low temperature, so that enzymes and microbes survive to transform the tea later.

Once you see the timing of the kill-green, the six teas stop being a list to memorise and become a single spectrum.

Where the tidy diagram lies a little

A clean top-to-bottom chart is a teaching tool, not a factory manual. A few honest caveats:

  • The steps overlap and repeat. Oolong's bruising and oxidation are not one pass but hours of repeated tossing and resting. Longjing green tea is shaped, fixed and dried all at once in the same wok. Yellow tea's sweltering is often done more than once.
  • White tea oxidises more than its reputation suggests. Because nothing ever halts it, white commonly reaches meaningful oxidation and keeps changing for years in storage. It is not "unoxidised," it is gently and permanently oxidising.
  • Yellowing is not oxidation. By the time yellow tea is sweltered (men huang), its enzymes are already dead. The mellowing that follows is a slow, warm, non-enzymatic change, closer to a gentle stewing than to the browning of a cut apple.

Sheng and shou: not the same tea

Dark tea, hei cha, is the one place where "one box" hides two genuinely different processes, and it is the mistake a knowledgeable drinker will notice first.

Shou (ripe) pu'er goes through wo dui, wet-piling: the maker heaps the leaf, keeps it warm and damp, and lets microbes ferment it over several weeks before it is ever sold. It is an active step done in the factory.

Sheng (raw) pu'er skips all of that. It is pressed and then simply aged, slowly, in storage, for years or decades. Time and microbes do the work, not the maker. Many drinkers argue that young sheng has more in common with a green tea than with shou. Presenting them as one "dark tea" path is a convenience, not the truth: they are two branches that only look alike on paper.

A naming trap worth knowing

English and Chinese disagree about the word "black."

  • What English calls black tea is 红茶 (hong cha, literally "red tea"): the fully oxidised type in the diagram above.
  • What Chinese calls 黑茶 (hei cha, literally "black tea") is the dark, fermented category: pu'er and friends.

Same two words, two different teas. When a vendor or a Chinese label says "black tea," it is worth a second to check which one they mean.
