Bruising
Bruising is the deliberate damage that starts oxidation. Nothing happens inside a whole leaf: the enzymes and the compounds they act on are kept in separate compartments and the only way to introduce them to each other and to the air is to break the leaf open. How hard it is broken sets how fast the oxidation runs and how far it can go.
What it is
Breaking the leaf's cells on purpose, after a pluck and a wither spent trying not to. The useful picture is a crate of bottles opened and poured into one vat. Inside the cells are enzymes along with a wide range of smaller molecules and the point of the operation is to get all of it into the same space with oxygen. Green tea is the family that skips this: its leaf is rolled too, but only after the heat has killed the enzymes, so the same mechanical action does shaping work instead of oxidation work.
What it does to the leaf
It sets the pace and the ceiling. Maceration is the fastest route to full oxidation, because the inside of the leaf is exposed all at once and everything mixes at once. Rolling is slower and gentler. Tumbling is gentler still and an oolong maker uses it to bruise the edges of the leaf while the centre stays intact, which is where the red rim on a spent oolong leaf comes from. Damage before this point is a defect rather than a technique: a leaf crushed in the basket oxidises early and unevenly, and the finished tea is uneven with it.
How it's done
Three, in rising order of violence. Tumbling turns the leaf in a large cylinder or shakes it by hand on a shallow bamboo basket and in oolong the friction against the bamboo does the work. Rolling presses and twists it on a rolling table or between the hands, and is the orthodox black tea method. CTC, for crush, tear and curl, was invented in the 1930s by William McKercher: the leaf passes between two toothed rollers that cut and tear it while the rollers crush and curl it into hard grains. CTC is fast, it is prevalent in Sri Lanka, Kenya and parts of India but not in China and almost all of it goes into teabags.
What it tastes like
The finer the break, the faster the extraction and the blunter the result. CTC gives a brisk, dark, full-bodied liquor that colours the water in seconds and is built for milk and a short brew. Orthodox rolled leaf gives up its flavour more slowly and holds more aroma. Oolong's edge-only bruising is what lets a single leaf carry a green centre and an oxidised rim and the tea it makes tastes like both at once.
What people get wrong
Assuming a bruised leaf is a damaged leaf. Bruising before this step is a fault and bruising at this step is the technique and the difference is entirely whether the maker chose it. The second mistake is reading CTC as a synonym for bad tea. It is a method built for a particular job, which is a strong, fast, cheap cup that takes milk and it does that job better than orthodox leaf does.
Where the boundary blurs
Bruising and shaping are usually the same physical act. A black tea's rolling breaks the cells to start oxidation and gives the leaf its twist in one pass, so the boundary sits in what the operation is doing rather than in when it happens: the same roll counts as the start of oxidation or as pure shaping, and both readings describe one leaf. The two come apart cleanly in only two places. A leaf can be bruised without being shaped, as an oolong is when it is tumbled to bruise its edges, and it can be shaped without being bruised, as a green tea is when it is rolled after the heat has killed its enzymes.
