Drying

Drying is the last thing that happens to nearly every tea and it does two jobs worth separating. One is preservation: take the moisture low enough that the leaf keeps. The other is flavour: use the same heat to push the tea somewhere it was not. Sometimes those are two distinct passes and sometimes they are one operation, which is why dried on a label can describe very different amounts of work.

What it is

Removing water with heat and moving air. The mechanism is plain: molecules have to be able to move in order to react, so taking the water out stops them finding each other and effectively freezes the tea's composition where it stands. The target is low. Two to three percent moisture is the figure most often given for shelf stability and published targets across different teas scatter roughly between one and five percent, partly because they are measured on different leaf at different points.

What it does to the leaf

It stops the clock, or close enough to it. The oxidative processes slow to nearly a full stop and the leaf becomes shelf stable. It also shrinks the crop dramatically: 100 kg of fresh leaf finishes as 15 to 25 kg of made tea, which is a large part of why tea is priced the way it is. Done badly it does damage nothing downstream can repair. Too slow and the leaf stews. Too fast and the outside dries long before the inside, a fault the trade calls case hardening.

How it's done

Three common, two less so. Commercial dryers carry the leaf through a heat source on perforated conveyors in an endless chain, or float it on a bed of hot air in a fluidised bed. Oven drying sets it on perforated trays and circulates hot air by convection. Sun drying spreads it outdoors, usually on shallow bamboo baskets, and for puerh it is not a convenience but a defining property: sun-dried maocha is what makes the tea puerh rather than a Yunnan green. The less common methods are charcoal firing, where the leaf sits in a shallow bamboo basket over hot coals, and drying on a thick masonry floor heated from below.

What it tastes like

Speed shows up as harshness and there is a number on it. India's Tocklai Tea Research Institute found that an average loss of more than 4 percent moisture per minute leads to bitterness and harshness in the made tea, while a loss of 2.8 to 3.6 percent per minute produces teas of good quality. That is a narrow band and it is why a modern dryer is an instrumented machine rather than a hot box. The flavour pass is a separate decision on top of it. Finish-firing means several hours at very low temperature, in an oven or a bamboo basket over coals, and lifts the aroma without changing it. Roasting is the harder version and does change it. Both work through pyrolysis of the leaf's amino acids and sugars, and both are usually reserved for higher-end tea and skipped in commodity production.

What people get wrong

Reading the Tocklai rate as a per-hour figure. It is per minute, which is what makes it demanding: at 3 percent a minute a leaf reaches shelf stability in under ten minutes, while the same number per hour would describe a process nobody runs. The second mistake is treating drying as a neutral finishing step. A tea can be ruined here after everything upstream went right and a good deal of thin, papery, faintly bitter tea is simply tea that was dried too hard.

Where the boundary blurs

For a fully oxidised tea, this step is also the kill-green. Most black tea gets no separate shaqing: the maker judges the oxidation finished, the leaf goes to the dryer and the heat denatures the enzymes on the way to shelf stability, so the halt and the drying are one operation carrying one name. That is the grey area where fixing and drying stop being separable at the black end of the range. It also runs into roasting at the other end, where drying for stability and drying for flavour use the same equipment and the same fuel and differ only in how far they are taken.
