Wet-piling

Wet-piling, wo dui, is the step that makes ripe puerh ripe. Damp leaf is heaped, covered and held warm for weeks while microorganisms work through it. This is the one operation in tea where fermentation is the accurate word and being precise about it matters, because the word gets borrowed for oxidation everywhere else and then has nothing left to mean here.

What it is

A controlled microbial pile. Sun-dried maocha is spread out in a room, dampened, covered with cloth and left under high heat and humidity for roughly 45 to 65 days, turned over several times so the whole pile works evenly. Published spans run as long as two or three months. The technique was developed in the 1970s to meet demand that decades of natural aging could not serve and it does in weeks a version of what raw puerh does in years. Once the pile is finished the leaf is sorted, by machine and then by hand, to pull out anything that did not take.

What it does to the leaf

Living organisms take over the chemistry. The leaf's own enzymes were killed at the kill-green stage and cannot be doing this work, which is precisely why the word here is not oxidation. The primary organism is Aspergillus niger, the same common mould responsible for the black dust on an onion and the enzymes it produces oxidise the leaf's polyphenols into theabrownins: the tea goes darker and much less astringent. A second species, Aspergillus sydowii, feeds on the caffeine, pulling methyl groups off as it goes. Fermentation is the right word for this and for the heicha piles that use the same technique, because the reaction is driven by microorganisms rather than by the leaf.

How it's done

One method with several dials. Pile depth, added water, temperature and how often the heap is turned are all the maker's call and the whole thing is done by feel. The leaf can simply be dampened and left to the moulds already living on it, or the pile can be seeded with chosen moulds for more control over the result. The same operation, under the same name wo dui, makes the Hunan, Sichuan and Guangxi heicha, where it happens before the leaf is pressed into bricks rather than after.

What it tastes like

Earthy, with notes of undergrowth and something animal that comes from the speed of the process. Most of the astringency of the young raw leaf is gone, which is the point: a ripe puerh is drinkable the day it is made, where a raw one of the same age is not. It does want a rest first. The standing advice is to wait at least three months after the pile before drinking, so the tea settles.

What people get wrong

Treating the pile as a substitute for age. It is not, and the trade has never claimed it is. Ripe puerh is made to be drunk now and gains only slightly with keeping, while raw puerh is made to be kept and is not considered mature for decades. The second mistake is assuming ripe puerh is the lesser tea by definition. It was treated that way for years, largely because early production was industrial and aimed at volume and the good ones have long since outgrown the reputation.

Ripe puerh does not need a decade in a cupboard. That is the raw one. A shop telling you a shou needs aging is selling you patience you do not need.
