Ali Shan

Ali Shan is the flagship Taiwanese high-mountain (gao shan) oolong, grown around 1000-1600 m in the Alishan area of Chiayi. Cold nights, thick mountain cloud, and slow growth give it the signature: a lightly oxidized, rolled oolong with a creamy, buttery texture, milky floral sweetness, and a soft, lingering finish with almost no astringency. It is the benchmark most other high-mountain oolongs are measured against.
Tightly rolled, jade-green semiballs that open into large, intact leaves; a fresh, milky-floral aroma and a thick, creamy mouthfeel are the marks of good high-mountain material. The natural creaminess comes from the elevation and the Qingxin cultivar, not from added flavoring, which distinguishes genuine Ali Shan from artificially scented milk oolong. Winter and spring harvests are the prize, and traceable high-elevation origin is a meaningful premium.
Grown in the Alishan township and surrounding high ridges of Chiayi County, central Taiwan, mostly from the Qingxin (green heart) oolong cultivar. High altitude slows growth, thickens the leaf, and raises the sweet, low-astringency character that defines gao shan tea, while cloud cover acts like natural shading. Ali Shan is both a place and a style, and the name is sometimes stretched beyond the core mountain, so traceable elevation matters.
Gongfu: 6-7 g per 100 ml, 95-100°C, 40-60 seconds first steep ascending, 6-8 infusions; the tight balls need heat and a moment to unfurl. Western: 4 g per 250 ml, 95°C, 3 minutes. Glass or gaiwan shows the leaves opening.
Solid Ali Shan oolong runs €20-50 (about $22-54) per 100 g. Top winter or spring estate lots from the highest gardens reach €50-100 (about $54-108) per 100 g.

The creamy, milky note in genuine high-mountain Ali Shan is natural, a product of elevation and cultivar, and should not be confused with flavored milk oolong scented with milk aroma. High-mountain tea farming in Taiwan expanded dramatically from the 1980s as growers chased the prized gao shan character at ever-higher elevations.
