Yixing teapot
A small unglazed stoneware pot from Yixing county in Jiangsu, China, made from local zisha clay and traditionally shaped by hand rather than thrown on a wheel. Because it is unglazed it is porous, and that porosity is the whole argument for and against it. It is the one vessel where what the pot is made of demonstrably changes what is in the cup.

What it is
Zisha comes in three broad families: zini or purple, hongni or red, and duanni or yellow. The clay is unusually high in iron oxide, malleable enough to be built by hand, and fired without a glaze, so the finished body keeps a measurable open porosity. Water absorption for Yixing bodies runs roughly 1.6 to 7.05 per cent, against effectively zero for vitrified porcelain. Pots are small, often 100 to 200 ml, and the good ones are startlingly expensive.
What it does to your tea
This has actually been measured, which is rare in teaware. Liao et al. brewed the same oolong in six pot materials and analysed the results by HPLC, GC/MS, LC/MS and ICP-MS. Infusions from zisha and zhuni pots carried higher total catechins including EGC and EGCG, less caffeine, the lowest total mineral content, and the lowest volatile compounds of the six. So the pot does change the cup, and it is not imagination. Read the numbers carefully though: the authors conclude the clay pots are presumably less bitter and more fragrant, but they ran no sensory panel, catechins are the astringent fraction and they went up, and the volatiles they measured went down. A porous pot absorbing aromatics is the straightforward reading of that last number.
What it suits
Black, oolong and dark tea, which is the consistent advice across every source and follows from the vessel rather than from tradition. A thick-walled clay pot holds heat, and those are the teas brewed hot. The delicacy of a green or white tea is the thing a porous, heat-retaining pot is least able to leave alone.
How to use one
Warm the pot first. Then treat it like a gaiwan: high leaf ratio, short infusions, pour off completely each time. Many drinkers pour the rinse water over the outside of the pot as well, which is a habit rather than a technique, though it does keep the outside hot.
How to choose one
There is a traditional three-level test and it is a real check on workmanship: the tip of the spout, the top of the handle and the rim of the pot should sit level with each other, the lid should fit snugly without rocking side to side, and handle and spout should align. Be aware of what that test is worth today. Most Yixing pots on the market are mass-produced and will pass all three perfectly, so a pot with slight deviations is now the better sign that a human made it. The potter's seal is usually on the base, sometimes under the lid or the handle.
Care and cleaning
Never use detergent. The clay is porous and will hold it. Rinse with hot water, empty the leaf, and let the pot air-dry with the lid off. Use one pot for one family of tea and stay with it, which is the rule that follows straight from the measured porosity: whatever the pot absorbs, it absorbs, and mixing a smoky black tea and a green oolong in one porous body is a decision you cannot undo.
What people get wrong
The memory teapot claim. You will read that tannin deposits build a coating that reveals the wealth of a tea's aromas, and that a well-used pot eventually brews good tea from hot water alone. No study supports it, and the one study that measured aromatics in clay-brewed tea found fewer of them, not more. What is well founded is the one-tea-per-pot rule, which needs no folklore: the body is measurably porous, so it takes things up. Buy a Yixing pot because it holds heat and suits your tea, and treat the flavour-improvement story as a tradition rather than a finding.
