What it is

Reported as much as a texture as a smell: a cool, clean, slightly hard finish, often with a dry stony quality that sits under the other flavours rather than beside them. Wuyi drinkers call the version they look for rock rhyme, and it is treated there as the mark of a genuine mountain tea. Tasters describing it converge on a narrow set of words, wet stones, flint, slate, salt, which is itself evidence that they are noticing something real.

Where it comes from

Not established, and the honest answer is that nobody knows. The obvious explanation, that minerals in the soil are tasted in the cup, does not survive contact with the evidence. Most soil minerals are tasteless, plant roots do not take them up in a form that reaches a leaf in perceptible quantity, and the wine world spent two decades testing exactly this claim and could not support it. Asking a room of experts what minerality means produces more than thirty definitions, clustering loosely into stone or flint, acid or fresh, and sea or shellfish. What is more likely is that several unrelated things, some aroma, some acidity, some texture, some water chemistry, are being gathered under one convenient word.

Which teas show it

Wuyi yancha above all, where the character is central to how the category is judged and priced. Some high-mountain oolongs, certain Chinese greens, and aged white teas. It is also strongly affected by your water: the same leaf brewed with a harder or more alkaline water can read as markedly more mineral, which is one of the better clues that the cup rather than the field is doing some of the work.

How to turn it down

Softer or lower-alkalinity water. If a tea reads as flinty and hard rather than cool and clean, the brewing water is the first suspect.

How to turn it up

Change the water before anything else, and see the water section for how much difference that makes. Beyond that, hot short infusions in a small vessel tend to show it more clearly than long ones in a mug.

What it gets confused with

Smoothness, since both are described by what they are not. Also confused with astringency, because a dry stony finish and a drying mouthfeel are easy to score as one thing. And genuinely confused with the effect of your own tap water, which is the one you can actually test: brew the same leaf twice with two different waters and see how much of the mineral note moves.

What people get wrong

Repeating the soil story. A tea grown on granite does not taste of granite, and passing that claim on makes every other terroir claim harder to believe. The care is worth it precisely because the sensation is real: the perception deserves a page, the folk explanation does not. The other mistake is treating a high mineral score as unambiguous praise. It can equally mean your water is hard.
